I am the mother to Cosmo, a 4-year old shihtzu. My dog requires a bath every 10 to 14 DAYS. Otherwise, the white parts of his paws start to resemble an old pair of UGG boots dipped in mud and then sun-dried, and he secretes the scent of a homeless person. If I were to stretch the time between his baths and let him walk around au naturel, we would all get evicted from our building in no time.

The best part comes AFTER the bath. When in the tub, Cosmo relinquishes his power and hands over authority to the person pouring water all over his body. He stands motionless, startled, with his eyes W-I-D-E open and mouth shut tight. He endures all that rubbing and scrubbing without uttering a single cuss word despite the fact that we give him enough reasons to call us every name in the book.

Then comes the towel… The challenge is to get as much moisture out of his coat as possible before Cosmo torpedoes out of the bathroom. When he’s out, he’s gone! With crazy eyes, he gallops across the house back and forth, non-stop, for about 3 days straight, pacing and barking at himself, his tongue hanging out and drops of water splashing all over the walls, floors, and ceiling. Suddenly, he stops for a moment to catch his breath, after which he takes off all over again and slaloms between the legs of the dining table and its chairs. If you find yourself in his path, you best run for your life. Nothing stops Cosmo when he’s in DRYER MODE.

Inevitably, the spectacle ends and Cosmo finds his way to me. Putting on his cutest face, wagging his tail, waving his eyelashes at me, he asks,  “What’s for dinner, mama?”

“Dog food for you, you little mischievous bundle of love you” “Roasted Asparagus Wrapped In Pancetta for me and daddy.”

In my effort to break the cycle of cushioning my midsection during the holiday season, I’m breaking the bank in search of ideas for flavorful yet light meals. Starvation and deprivation are two words that longer belong in my dictionary. They should never be an option for you either. Eat whatever you want, just be smart about it, and love yourself no matter what!

ROASTED ASPARAGUS WRAPPED IN PANCETTA served with a side of Mâche with Avocado Salad with Strawberry Dressing makes a beautiful and delightful dinner for two, and most importantly leaves room for dessert.

To start, preheat the oven to 400°. Snap the ends of the asparagus spears off and drizzle them gently with olive oil before seasoning with black pepper. You don’t need salt because of what’s coming up next: wrap a paper-thin slice of pancetta (or pastrami) around each spear and lay it flat on a baking sheet. Place the pan in the oven for about 12-15 minutes until the asparagus is cooked, but still has a little bite to it.

In the meantime, prepare your salad as you would with the Mustard Dressing. Except this time, instead of Dijon mustard, add a handful of chopped fresh strawberries and whip the dressing in a blender or Magic Bullet, if you have one. Then dress your greens and avocado gently, drop a few chunks of strawberry around for extra blush, and serve everything with a toasted slice of baguette.

The salty and crunchy bites of the Asparagus contrast, thus emphasizing the delicate leaves and flavor of the cow grass dipped in strawberry juice, making this an exquisite and sophisticated meal .

Who even needs a dessert after that?

This week I chose to do an experiment. I wanted to try how it tastes to be an adult. You know, a responsible, preventive, and prepared person. In other words – an un-spontaneous human. I sat my ass down and planned it all out – the menu, activities, Cosmo’s vaccinations, yoga, and writing. The irony is that the very first time I decided to exercise mature behavior – BAM! – lightning struck right in the middle of my sandbox disguised as a phone call from HBO asking if I could fill in for one of their guys, who fell victim of the flu.

Don’t get me wrong… getting a call like that makes me as happy as that kid from “Slumdog Millionaire” that hustles through an ocean of fecal matter when given a chance to see his Bollywood idol. Frankly, I got so excited I shaved my legs. Not that anyone in the office would ever see me in anything less then full body coverage, cape included.

On top of that, two more irresistible gig offers came in almost simultaneously – both involving work with my befriended chefs. How is it that I can practice the most comfortable couch potato position (tuchas buried deep in between the cushions, legs stretched out on the coffee table, with my mouth wide open, and a laptop rested under the chin on my two perky you-know-whats) for five months, and no job seems to find its way to me? Then one day, within less than twenty-four hours, everybody needs me at once, and I get bombarded with offers. HOW?

Yes, I have been unemployed for the last few months, I admit. It’s the first time in my life that I’ve been on hiatus for that long. Two, three-weeks in between jobs happen to everyone. But five months? It’s many weeks, days, and hours (!) to fill with activities preventing one from going coo-koo. Writing helps me stay focused. (Otherwise, I get side tracked too easily, take a wrong turn, and get lost in the labyrinth of thoughts in my head.) Cooking is therapeutic. Cosmo is entertaining. Jason is understanding and supportive. Agi is convinced she’s uncovered her creative voice, and thus must exercise it at all costs.

The latest fruit of my creative purging is a meal I designed in my kitchen art studio when Jason went to the Devo concert last Tuesday – SAUTÈED BRUSSELS SPROUTS AND ONIONS ON A BED OF QUINOA INFUSED WITH FRESH HERBS (gasp…inhale). By far, it is the ULTIMATE COMFORT FOOD with an emphasis on healthy and )))flatulent(((. Do not let the last trait stop you from following the recipe since utmost satisfaction from the meal is GUARANTEED. Simply make sure to let yourself out for a walk when the digestive process sets in to prevent turning your pad into a deadly gas chamber.

I realize not many people are friends with the above mentioned cabbage relatives. The problem lies within the cooking method. Do it intelligently and the frog will turn into a Handsome Prince for the happily ever after.

YOUR INGREDIENTS OF THE NIGHT:

–       1 cup quinoa

–       1.5 lbs Brussels sprouts, peeled and halved

–       4 oz pancetta, diced

–       1 large onion

–       3-4 cloves of garlic

–       1 tbsp dried marjoram

–       1 tbsp of unsalted butter

–       1/2 cup fresh dill, chopped

–       1/2 fresh Italian parsley (or another fresh herb), chopped

–       kosher salt and freshly ground black pepper to taste

–       1/2 tsp red pepper flakes

Tie an apron around your waist and let’s make you this Masterpiece In A Bowl. First things first, let’s cook quinoa in a 2:1 ratio (2 cups of liquid to 1 cup of grain).  You can use regular water and a few bay leaves with a couple of teaspoons of salt. You could go the chicken broth route. Or just dissolve a bullion cube in the pot with quinoa to enrich its flavor. Follow cooking directions from the box.

When that’s taken care of, start chopping your onion – cut it in half first, then slice both parts. Crisp the pancetta on a heated skillet, remove the cracklings and set aside for later. Add the butter to the pan, and throw in the onions along with marjoram and a big pinch of salt and pepper. Stir around to ensure even coating in grease and spices. Let the onions sauté slowly on low heat for about 10-15 minutes. When ready, remove from the pan and set aside with your cracklings.

In the meantime, blanch your mini cabbage buds for just a few minutes, and then shock them in a bowl filled with ice water. Drain immediately and set aside. When the onions are done and resting with the pig bits on the counter, chuck the Brussels sprouts onto the same skillet and brown them over a low to medium flame. Sprinkle red pepper flakes over the buds. Let them hit the bottom of the hot skillet, thus opening up their chambers of flavor.

Check on the quinoa. If it’s fully cooked, take it off the heat, and toss in all fresh herbs, previously chopped as ordered. Mix it, taste it. Is it salty enough? Don’t be afraid to fix the dish to your own liking. That’s the point after all, isn’t it?

Mix the mini cabbages in the skillet again, add your cracklings and onions, and tumble all around. Turn off the heat. Scoop a little quinoa into a bowl, cover with a layer of the Brussels sprouts and the works, twist open a bottle of beautifully chilled Blue Moon, dive into the cushions of your couch, stretch your legs over the coffee table, turn on the TV, and DIG IN.

Hurry! Hurry before the summer really is just a sweet, sunny memory. . The scorching heat is behind us, true, but if you open your windows, spread your arms wide and look up, your face will still get a big fat lick of energy from our Brightest Star. Hurry!

As October makes itself more at home with each passing day, there are also fewer varieties of sweet luscious fruits at the Farmers Market to be found. Bummer. Even though I’m bursting with fruit flavors for all the fall apples and pears, I wish I could somehow capture the sweet joy of peaches we devoured this past season.

PEACHES

If you HURRY, you may still be able to grab a few juicy peachy balls from the last supplies of an orchard. And while you’re there browsing the stands of fresh, organic produce from your local farmer (hats off for the love he delivers in those crates and boxes), snatch a bag of iron and calcium rich spinach, a couple of pinkish shallots and run home to check your stock of pine nuts.

I’m going somewhere with this, I promise.

As I’m pondering how to segue from the tour at the local Farmer’s Market to your kitchen, Cosmo checks on me occasionally (You know, the usual editing stuff – typos, orthography, syntax – he’s alert!) from his office.

I won’t beat around the bush any longer. Today we’re making a Spinach and Grilled Peach Salad. Empty your shopping tote and align the following suspects on your kitchen counter:

–       2 Peaches

–       Spinach (6 oz. bag, more or less)

–       1/2 cup of toasted pine nuts

–       3 slices of pancetta

–       White Balsamic Vinegar

–       Extra Virgin Olive Oil

–       1 Shallot (the rest you can keep for later)

–       Salt + Pepper

How do you like the ingredients so far? Can you put it all together into a perfect salad just using your imagination? Can you taste the sweetness mixed with salty bites of Italian bacon, all wrapped in a smooth symphony of White Balsamic Vinaigrette? No? Then go ahead and grab yourself a grilling pan and heat it up, while you seed your peaches and give each one a wedgie – eight to ten per fruit, to be precise.

You also need your nuts toasted, and for such a small amount, I wouldn’t bother the old fat oven if I were you. Just spread the pignoli flat on a sheet pan of your toaster oven, or – if there’s a lack of such – use your loyal buddy, the frying pan. It will take circa 5 minutes (maybe 7, but that’s pushing) and only 2-3 on the pan for the guys to be all tanned and happy. The minute you smell your nuts, it’s time to get them out. (I can see where your mind is heading. Do NOT even go there!)

Your grilling pan surely is scorching hot by now – a perfect surface for the slices of pancetta. Let the fat melt away while the bacon gets crispy. Next, remove the brittle slices and set on a paper towel to get rid of the extra grease and let the guys chill.

Onto the same pan, throw the wedges of your fruit and spread in one layer. Let them sit flat for a couple of minutes until the heat breaks the body and you see grill marks on one side. Flip each one over and give it another 2 minutes or so. Turn off the heat and set the peaches aside to cool as well.

Before you relocate everybody into a bowl, you want to shake up the vinaigrette first. Mix two parts of olive oil with one part of white balsamic vinegar, add a finally chopped shallot, big pinch of salt, a smaller pinch of black pepper, and whip it good. Better even – drop the potion into a blender, and let it take a ride on a rollercoaster.

Bowling time! Into a glass bowl, toss the spinach, drizzle with just a touch of your vinaigrette, and mix until the greenery is all coated and smiling brightly. Now gently place pieces of grilled peaches on top, sprinkle with crushed chunks of cooled pancetta, bring in the pine nuts, and sprinkle all with another few drops of the White Balsamic Vinaigrette. Like a gentleman, toss everybody around, carefully, softly, easy…

The salad is ready. Picture time! Enjoy the view, as it won’t last long after you dive with your fork for the first taste. Do you get it now? The sweet and savory fixed together in the mist of sweet and tart vinaigrette…Mmm.
